The Foodie in Me - Sweet Potato Hash

I love cooking. Hands down one of my favorite things to do besides workout. It's a stress reliever and my "me time".

Today I made sweet potato hash. Holy smokes it was fantastic. So it's only fair I share the recipe.

Ingredients:
-2 large sweet potatoes
-1lb ground meat of choice (I used venison)
-4 slices of bacon
-garlic powder
-onion powder
-red chili flakes
-smoked paprika
-sea salt
-raw local honey

Directions:

1. Peel and cube the sweet potatoes

2. Brown meat and bacon until bacon fat starts to render

3. Add sweet potatoes to the mix

4. Add spices to desired taste. The more the merrier (except with salt)

5. Cook until potatoes are tended about 15 min. Stirring often to prevent burning.

6. Add one tablespoon of honey and mix well.

Viola!!! You're done! You've got yourself one fantastic Paleo friendly yummy goodness!

Enjoy It!

I Think This Girl's Gone Cray Cray

I know I'm crazy. Clinical diagnosed and proven. But aside from that I think I do the craziest of things sometimes. Like for instance: I signed up for a 1/2 marathon in April. WHO does that???

I do.

I hate running. WITH. A. PASSION. I mean it when I say it. I've never in my life run more than two consecutive miles at a time...until today. I made it three miles without stopping and I didn't keel over and die of embarrassment or exhaustion. Maybe, just maybe I'm in better shape than I thought.

I downloaded Hal Higdon's 1/2 Marathon Training Program. It seems pretty legit (it better be for $10.99). It gives a daily schedule of what I should be running and other cross training guidelines...along with stretches and what not.

I bought new running shoes. They feel like heaven on my feet. Hopefully it'll keep me from getting those chronic shin splints I'm prone to. I love the shoes. It doesn't hurt that they're pink and purple as well.

I joined a "globo gym." If you don't know by now I CrossFit...so I don't go to the typically everyday gym. BUT since I spend at least two hours at CrossFit (coaching and working out) the only time I can find to run during the week is at work. Sooo a membership to the YMCA it is. It isn't bad. Typical gym with all your cardio equipment and what not. I ran on the treadmill today...Booorrriinngg. But the indoor track is only 1/10 of a mile and running in 30 circles would drive me up the wall. At least I had a downtown window view on my treadmill. So I stared at skyscrapers and random people walking by.

I bought an arm band for my tunes. It's nifty. I 've never used one before but it's better than stuffing a phone in my sports bra. Although it did rub a spot on my arm. I've gotta fix that. Can only imagine what it'll do after 13.1 miles. I do, however, need to invest in the Pandora upgrade without commercials. Nothing kills the vibe more than stupid ads on the radio when you're pumped up.

So I'm gonna do this. I'm excited and nervous at the same time. But I got this. Can't wait till April 13th!

Adios Amigos,
